Dabu-Dabu Manado Sambal
Ingredients
- 4 red Thai chilies, finely chopped (deseeded if you prefer less heat)
- 4 small banana shallots or 8 Thai shallots, peeled and thinly sliced (Ewa or mandoline)
- 30 cherry tomatoes, split
- Zest and juice of 2 limes
- 1 1/2-2 tsp sea salt flakes, to taste
- 3 tbsp palm sugar or brown sugar
- Large handful of lemon basil, Thai basil or Italian basil leaves, roughly torn
Preparation
- Place the chilies, shallots, tomatoes, lime zest and juice in a bowl.
- Season with the salt and sugar and leave to sit for 15 minutes to allow the flavours to combine.
- Strain the liquid from the sambal through a sieve.
- Stir the basil leaves through the sambal just before serving.
